Made to be shared.
Fresh pineapple turns golden at the edges with a light smoky note and a buttery brown-sugar glaze. Serve it warm on its own or with vanilla ice cream for an easy dessert to pass around.
INGREDIENTS
Ingredients
1 ripe pineapple, peeled, cored and cut into thick rings or wedges
2 tbsp soft brown sugar
1 tbsp melted butter or coconut oil
½ tsp ground cinnamon
1 tsp lime zest
1 tbsp lime juice
1 tsp vanilla extract (optional)
A tiny pinch of sea salt
To serve: vanilla ice cream, fresh mint or toasted coconut (optional)
Make something golden.
Make the Caramel Coating
Mix the brown sugar, melted butter or coconut oil, cinnamon, lime zest, lime juice, vanilla if using, and a tiny pinch of salt.
Brush the mixture over the pineapple pieces, coating both sides lightly.
Prepare for the Table
Cut the pineapple into evenly sized rings or wedges so the pieces cook at a similar rate.
Have serving plates ready, along with ice cream, mint or toasted coconut if you are using them.
Caramelize and Share
Place the pineapple on the preheated Rondue and cook, turning occasionally, until golden at the edges and tender through the centre.
Watch the sugar coating closely because it can darken quickly. Move pieces to a cooler area if they colour too fast.
Serve warm on its own or with vanilla ice cream. Finish with fresh mint or toasted coconut for extra texture.
Save room for
something sweet.
A golden, smoky-sweet finish worth sharing around the table.
