Salmon gets a lively glaze of chilli, soy, honey and lime for a sweet-and-spicy dish with plenty of character. Add crunchy vegetables and rice for a colourful meal that is easy to share.
INGREDIENTS
Ingredients
4 salmon fillets, cut into large chunks
2 tbsp soy sauce
1½ tbsp honey
1 tbsp sweet chilli sauce
1 tbsp lime juice
1 garlic clove, finely grated
1 tsp fresh ginger, finely grated
½ tsp chilli flakes, or to taste
1 tbsp neutral oil
1 spring onion, finely sliced
To serve: lime wedges, sesame seeds, rice and crunchy vegetables
Cook it together.
Mix the Firecracker Glaze
Whisk together the soy sauce, honey, sweet chilli sauce, lime juice, garlic, ginger and chilli flakes.
Set aside a little clean glaze for serving before adding any raw fish. Gently coat the salmon chunks with the remaining glaze.
Prepare the Sides
Cook the rice and prepare the vegetables and lime wedges before starting the salmon.
Keep raw fish and its marinade separate from cooked food, serving plates and utensils.
Cook Until Glossy
Lightly oil the preheated Rondue. Cook the salmon in batches, turning carefully so the pieces colour evenly.
Cook thoroughly until the salmon reaches 63°C at the centre and flakes easily. Keep an eye on the glaze as its sugars can darken quickly.
Finish with spring onion and sesame seeds. Serve with rice, vegetables, lime wedges and the reserved clean glaze.
Bring the table

Sweet heat, fresh lime and a reason to linger around the table.
